  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 pound spaghetti
  • 4 tablespoons butter
  • 4 cloves garlic
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 8 ounces cream cheese
  • 2 cups shredded mozzarella cheese
  • Optional: red pepper flakes

Instructions

  1. Cook spaghetti in salted water until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning and smoked paprika.
  3. In a large skillet, heat olive oil over medium-high heat. Cook chicken until browned, about 6–8 minutes. Remove from skillet.
  4. In the same skillet, melt butter; sauté garlic until fragrant.
  5. Whisk in flour to form a roux, then gradually whisk in milk and chicken broth until smooth.
  6. Stir in cream cheese and 1 cup mozzarella until melted.
  7. Add Parmesan cheese; season with salt, pepper, and optional red pepper flakes.
  8. Return chicken to sauce and simmer for 2–3 minutes.
  9. Toss cooked spaghetti with sauce; top with remaining mozzarella and cover until melted.
