  • 1 ⅓ cups milk (preferably 2%)
  • 2 tablespoons loose leaf Earl Grey tea (or 2 teabags)
  • 1 whole vanilla bean
  • 5 large egg yolks
  • ⅓ cup granulated sugar
  • ⅛ teaspoon sea salt
  • 1 cup heavy cream (or whipping cream)
  • 4 tablespoons granulated sugar (for caramelizing)

Instructions

  1. Infuse the milk: Combine milk, split vanilla bean and seeds, and Earl Grey tea in a saucepan; bring to a boil, then steep for 10 minutes before straining.
  2. Preheat your oven to 160°C (320°F) and prepare a water bath in a baking tray.
  3. In a bowl, mix egg yolks and sugar until smooth. Stir in the infused milk, cream, and sea salt.
  4. Pour the mixture into ramekins placed in the baking tray and fill with boiling water halfway up the sides.
  5. Bake for 25-30 minutes until mostly set with a slight jiggle.
  6. Chill for at least three hours before caramelizing sugar on top just before serving.
