  • 1/2 cup Dutch process cocoa powder
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup canola oil
  • 3/4 cup packed light brown sugar
  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another large bowl, mix eggs, melted butter, canola oil, brown sugar, and vanilla until smooth.
  4. Gradually combine the dry ingredients with the wet mixture. Fold in shredded zucchini and 3/4 cup chocolate chips.
  5. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50–60 minutes or until a toothpick comes out mostly clean.
  7. Let cool in the pan for 15 minutes before transferring to a wire rack.
