Ingredients
- 2 Tbsps Extra virgin olive oil
- 1/2 red onion, chopped
- 3 garlic cloves, minced
- 2 organic celery stalks, chopped
- 2 medium carrots, peeled and chopped
- 4 fresh thyme sprigs
- 1 bay leaf
- 4 cups chicken or vegetable stock, organic
- 3 Tbsps white cooking apple vinegar
- 1 tsp sea salt
- 1 cup heavy cream, organic
- 2 tsps On Everything All-Purpose Blend
- 1 tsp smoked paprika
- 1–1 1/2 cups cooked Basmati Rice
- 1 cup freshly-grated parmesan
- 1 cup shredded mozzarella cheese, organic
Instructions
- Chop onion, celery, carrots, and mince garlic.
- In a large pot, heat olive oil over medium heat. Sauté onion, garlic, celery, and carrots until softened (about 5 minutes).
- Stir in shredded chicken, thyme sprigs, bay leaf, and stock; bring to a gentle simmer.
- Mix in heavy cream, vinegar (if using), sea salt, spice blend, and smoked paprika.
- Add cooked basmati rice and stir in Parmesan and mozzarella until melted.
- Remove thyme sprigs and bay leaf before serving hot.
