Ingredients

  • 2 slices whole-grain or sourdough bread
  • 2 large eggs
  • 1 cup baby spinach
  • 1 cup sliced mushrooms (cremini or button)
  • 2 slices fresh tomato
  • 2 tbsp cream cheese (or dairy-free spread)
  • 1 garlic clove, minced
  • 1 tsp olive oil or butter
  • Salt & pepper to taste

Instructions

  1. Boil eggs for 7 minutes for jammy yolks. Cool in ice water before peeling and halving.
  2. Toast bread slices until crispy.
  3. In a frying pan, heat olive oil or butter over medium heat. Sauté sliced mushrooms and minced garlic for 5–6 minutes until golden brown; season with salt and pepper.
  4. Wilt baby spinach in the same pan; season lightly with salt.
  5. Assemble by spreading cream cheese on one slice of toast, layering fresh tomatoes, and placing sautéed mushrooms on the other slice. Serve alongside halved jammy eggs and wilted spinach.
