- 2 slices whole-grain or sourdough bread
- 2 large eggs
- 1 cup baby spinach
- 1 cup sliced mushrooms (cremini or button)
- 2 slices fresh tomato
- 2 tbsp cream cheese (or dairy-free spread)
- 1 garlic clove, minced
- 1 tsp olive oil or butter
- Salt & pepper to taste
Instructions
- Boil eggs for 7 minutes for jammy yolks. Cool in ice water before peeling and halving.
- Toast bread slices until crispy.
- In a frying pan, heat olive oil or butter over medium heat. Sauté sliced mushrooms and minced garlic for 5–6 minutes until golden brown; season with salt and pepper.
- Wilt baby spinach in the same pan; season lightly with salt.
- Assemble by spreading cream cheese on one slice of toast, layering fresh tomatoes, and placing sautéed mushrooms on the other slice. Serve alongside halved jammy eggs and wilted spinach.
