  • 2 pounds zucchini (sliced)
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • Italian seasoning
  • onion powder
  • salt
  • pepper
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 425°F.
  2. Butter a baking dish and slice the zucchini into ¼-inch rounds. Sprinkle with salt and let rest for 15 minutes; then pat dry.
  3. Arrange the zucchini in the baking dish.
  4. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the Parmesan cheese.
  5. Melt butter in a saucepan over medium heat; add garlic and cook until fragrant.
  6. Pour the cream mixture into the saucepan with garlic and whisk until bubbly.
  7. Stir in half of the mozzarella until melted.
  8. Pour the sauce over the zucchini and top with remaining cheeses.
  9. Bake for 18-22 minutes until golden brown.
  10. Allow to cool for 5-10 minutes before serving.
