  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté diced onion and bell pepper in olive oil until soft (3–4 minutes), then add chopped spinach and cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper.
  3. In a large mixing bowl, whisk together eggs, milk, and cottage cheese until combined. Stir in Italian seasoning and additional salt and pepper to taste.
  4. Fold in shredded cheese and the sautéed vegetable mixture until well combined.
  5. Pour the mixture into a greased 9-inch pie dish and bake for 40–45 minutes or until golden brown on top.
