  • 80g mascarpone
  • 120ml coconut milk
  • 120g powdered sugar
  • 80g unsweetened cocoa powder
  • 140g softened butter
  • 160g all-purpose flour
  • Vegan gelling agent (e.g., agar-agar)
  • Grated coconut
  • Gooey Cocoa Spread

Instructions

  1. For the coconut mousse, whip the heavy cream and mascarpone until soft peaks form. Gradually add powdered sugar and chill.
  2. Soak vegan gelling agent in cold water and dissolve in warm coconut milk. Fold into the whipped mixture.
  3. Pour into hemisphere molds with a spoonful of cocoa spread, freeze for at least six hours.
  4. For the Cocoa Breton Shortbread, mix ingredients into dough, chill, roll out, cut shapes, and bake until firm but not browned.
  5. Assemble by placing frozen domes on cooled shortbread bases and thaw before serving.
