- 4 salmon fillets
- 1 cup shredded coconut
- 1/2 cup breadcrumbs
- 2 tablespoons honey
- Salt to taste

- 1 cup diced fresh pineapple
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons lime juice
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine shredded coconut, breadcrumbs, honey, salt, and pepper.
- Place each salmon fillet on a baking sheet lined with parchment paper and generously press the coconut mixture onto each fillet.
- Bake for 15-20 minutes until the salmon is cooked through and the crust is golden brown.
- Meanwhile, mix diced pineapple, red onion, jalapeño, lime juice, and cilantro in another bowl to prepare the salsa.
