- 2 medium sweet potatoes, peeled and cut into chunks
- 1 (14 oz) can full-fat coconut cream
- 2 cups beef or chicken broth
- Juice of 1 lime
Instructions
- Heat olive oil in a heavy-bottomed pot over medium-high heat. Season lamb shanks with salt and pepper, then sear on all sides until browned (about 5-7 minutes). Remove and set aside.
- In the same pot, cook chopped onion until translucent (about 3 minutes). Stir in garlic, ginger, coriander, cumin, and cinnamon; cook for another minute until fragrant.
- Return lamb shanks to the pot, then pour in coconut cream and broth. Add lime juice and sweet potato chunks.
- Bring to a gentle simmer, cover with a lid, and cook on low heat for about 2 hours or until lamb is fork-tender.
- Serve hot over rice or quinoa, garnished with fresh coriander if desired.
