  • 2 lamb shanks
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cinnamon
  • Salt and pepper, to taste
  • 2 medium sweet potatoes, peeled and cut into chunks
  • 1 (14 oz) can full-fat coconut cream
  • 2 cups beef or chicken broth
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Season lamb shanks with salt and pepper, then sear on all sides until browned (about 5-7 minutes). Remove and set aside.
  2. In the same pot, cook chopped onion until translucent (about 3 minutes). Stir in garlic, ginger, coriander, cumin, and cinnamon; cook for another minute until fragrant.
  3. Return lamb shanks to the pot, then pour in coconut cream and broth. Add lime juice and sweet potato chunks.
  4. Bring to a gentle simmer, cover with a lid, and cook on low heat for about 2 hours or until lamb is fork-tender.
  5. Serve hot over rice or quinoa, garnished with fresh coriander if desired.
