  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold unsalted butter, cubed
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar
  • 6 Tbsp. softened butter (for filling)
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon for the filling.
  3. Combine all dry ingredients in a large bowl.
  4. Cream cold butter and granulated sugar with a stand mixer until smooth.
  5. Add eggs and vanilla extract; mix well.
  6. Gradually incorporate dry ingredients until fully combined.
  7. Shape dough into a rectangle on a floured surface; spread the cinnamon filling over it.
  8. Roll up the dough tightly, slice into pieces, and place on a baking sheet lined with parchment paper.
  9. Bake for 9–11 minutes until edges are lightly golden.
  10. Cool cookies before frosting with cream cheese mixture.
