  • 2 ounces semi-sweet chocolate (chopped)

  • 4 ounces Biscoff cookies (broken into chunks)
  • ½ cup toasted pistachios
  • ½ cup confectioners' sugar

Instructions

  1. Combine dried cranberries in a bowl and microwave for about 30 seconds until hot. Let cool for 15 minutes.
  2. In a microwave-safe bowl, melt bittersweet and semi-sweet chocolate with heavy cream at 50% power in 30-second intervals until smooth.
  3. Mix in broken Biscoff cookies and kosher salt into the melted chocolate. Stir in the softened cranberries and pistachios.
  4. Divide the mixture onto parchment paper, shape into two logs, twist ends to secure.
  5. Chill logs in the refrigerator for at least three hours until firm.
  6. Dust with confectioners' sugar before slicing into half-inch thick pieces.
