  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth (or vegetable broth)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish.
  2. In a large skillet over medium heat, heat olive oil. Season chicken with salt, pepper, and dried thyme or Italian seasoning; cook for about 5-6 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté minced garlic for one minute before adding mushrooms; cook until softened (about 5 minutes). Stir in chopped spinach and cook until wilted (2–3 minutes).
  4. Pour in heavy cream and chicken broth; simmer for about 3–4 minutes until slightly thickened.
  5. In the prepared baking dish, layer cooked chicken breasts and pour the creamy vegetable sauce over them. Top with mozzarella and Parmesan cheese.
  6. Bake for 15–20 minutes until cheese melts and is bubbly.
