- 1/2 cup canned pumpkin (blotted)

- 1/2 cup granulated sugar (for coating)

Instructions
- Prepare brown butter by melting it in a saucepan until golden brown, then cool.
- Blot canned pumpkin to remove excess moisture.
- In one bowl, combine flour, spice blend, baking soda, and salt. In another bowl, mix cooled brown butter with brown sugar and maple syrup until blended. Add egg yolk, pumpkin, and vanilla extract.
- Gradually mix dry ingredients into wet ingredients until just combined. Chill dough for at least 8 hours.
