  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk (room temperature)
  • 1/2 cup canned pumpkin (blotted)
  • 2 tsp vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1/2 tsp pumpkin or chai spice blend (for coating)

Instructions

  1. Prepare brown butter by melting it in a saucepan until golden brown, then cool.
  2. Blot canned pumpkin to remove excess moisture.
  3. In one bowl, combine flour, spice blend, baking soda, and salt. In another bowl, mix cooled brown butter with brown sugar and maple syrup until blended. Add egg yolk, pumpkin, and vanilla extract.
  4. Gradually mix dry ingredients into wet ingredients until just combined. Chill dough for at least 8 hours.
  5. Preheat oven to 350°F (177°C). Shape chilled dough into balls and roll in spiced granulated sugar before placing on lined baking sheets.
  6. Bake for 12-14 minutes until slightly underbaked. Cool on sheets before transferring to a rack.
