  • 1 teaspoon kosher salt
  • ½ cup baking soda (for boiling bath)
  • 2 cups shredded cheese (cheddar, mozzarella, or your choice)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a large bowl, mix warm water, sugar, and yeast. Let sit for about 5 minutes until frothy.
  2. In another bowl, whisk together flour and kosher salt.
  3. Combine flour mixture with yeast mixture to form a dough.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth.
  5. Place in an oiled bowl, cover, and let rise for about 30 minutes until doubled in size.
  6. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  7. Bring 10 cups of water to a boil; add baking soda carefully.
  8. Punch down the risen dough and divide it into equal pieces. Roll each piece into a rope and shape into pretzels.
  9. Boil each pretzel in the baking soda solution for about 30 seconds; then place on the prepared baking sheet.
  10. Cut small slits in each pretzel and stuff with shredded cheese.
  11. Brush with beaten egg and sprinkle coarse sea salt on top.
  12. Bake for 15-20 minutes until golden brown.
