  • 1 1/2 cups broth (chicken or vegetable)
  • 12 ounces gluten-free pasta
  • 1 pound boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 1/2 small yellow onion, finely diced
  • 1/2 large red pepper, thinly sliced
  • 1/2 large yellow or orange pepper, thinly sliced
  • 3 cloves garlic, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ¼ teaspoon dried thyme
  • Pinch or two of cayenne (optional)
  • Parsley (optional)

Instructions

  1. Soak cashews in boiled water for at least 30 minutes.
  2. Cook gluten-free pasta according to package instructions; reserve some cooking water.
  3. In a skillet, heat olive oil and cook chicken pieces until golden brown; set aside.
  4. Sauté onions, peppers, and garlic in the same skillet until tender.
  5. Blend soaked cashews with broth, nutritional yeast, salt, and black pepper until smooth.
  6. Combine the cooked pasta, chicken, sautéed vegetables, and cashew cream sauce in the skillet; simmer gently.
  7. Adjust consistency with reserved pasta water if needed; season to taste.
