  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 2 cups cooked rice
  • Lime wedges, for serving

Instructions

  1. In a large mixing bowl, combine chicken, sausage, olive oil, Cajun seasoning, garlic powder, salt, and black pepper. Toss to coat.
  2. Heat a grill pan or skillet over medium-high heat. Cook the chicken and sausage for about 5-7 minutes per side until cooked through.
  3. Meanwhile, prepare the creamy cilantro sauce by whisking together mayonnaise, sour cream, chopped cilantro, lime juice, chili powder, cumin, garlic powder, salt, black pepper, and cayenne pepper until smooth.
  4. To assemble the bowls: divide cooked rice into serving bowls, top with sliced chicken and sausage, drizzle with creamy cilantro sauce, and serve with lime wedges.
