  • ½ cup cooked turkey bacon, crumbled
  • 2 tablespoons unsalted butter
  • ¼ cup shredded white cheddar cheese
  • 6 large eggs
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • Minced scallion for topping

Instructions

  1. Preheat the oven to 350°F.
  2. Prick each sweet potato several times with a fork to allow steam to escape.
  3. Coat the sweet potatoes with oil and sprinkle with salt. Bake on a baking sheet for 60-90 minutes until fork-tender.
  4. Once baked, carefully slice each potato in half lengthwise and scoop out the centers into a mixing bowl.
  5. Combine the scooped sweet potato flesh with turkey bacon, butter, and cheese until well-mixed.
  6. Fill the potato skins with the mixture and create a well in each for an egg.
  7. Crack an egg into each well, season with salt and pepper, then return to the oven for an additional 15-20 minutes until eggs are set.
  8. Serve warm topped with scallions.
