  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for filling)
  • 1 large egg yolk (for filling)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually add dry ingredients until just combined.
  4. In another bowl, beat cream cheese with additional sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin tins with batter about three-quarters full. Spoon cream cheese mixture on top and swirl gently with a toothpick.
  6. Bake for 18–20 minutes or until a toothpick comes out clean with a few moist crumbs.
