Ingredients
- ½ cup coconut oil (melted)
- 1 ½ cups all-purpose flour (or gluten free substitute)
- 1 ½ cups quick oats
- ⅓ cup maple syrup
- ⅓ cup coconut sugar (or granulated)
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup raspberry preserves
Instructions
- Preheat oven to 350°F and grease an 8×8 baking pan.
- In a mixing bowl, combine all ingredients except raspberry preserves until well mixed.
- Press two-thirds of the mixture into the bottom of the prepared pan evenly.
- Spread raspberry preserves over the base layer, leaving a half-inch border.
- Crumble the remaining mixture on top and lightly press down.
- Bake for 25-30 minutes until lightly browned.
- Cool in the pan on a cooling rack before slicing into bars.
