Description

Baked Parmesan Zucchini Fries are a delicious and healthy alternative to traditional fries, perfect for snacking or as a side dish. These crispy, flavorful sticks are coated with freshly grated Parmesan cheese and a blend of herbs, then baked to perfection for a guilt-free treat that even kids will love.

Ingredients

Scale
  • 1 1/2 lbs zucchini (3 medium)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • Assorted dried herbs (thyme, oregano, basil)
  • Spices (smoked paprika, garlic powder)
  • Kosher salt and black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and spray lightly with cooking spray.
  2. In a mixing bowl, combine Parmesan cheese, dried herbs, smoked paprika, garlic powder, salt, and pepper.
  3. Toss zucchini wedges in olive oil until evenly coated. Roll each wedge in the Parmesan mixture until fully covered.
  4. Place the coated zucchini on the prepared baking sheet, ensuring they are spaced apart.
  5. Bake for about 15 minutes until crisp. For added browning, broil for an additional 2–3 minutes.
  6. Garnish with fresh parsley and serve warm.
