Ingredients
- 2 cups apple cider
- 3 tbsp granulated sugar
- 1 3/4 cups all-purpose flour
- 2 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 2 egg yolks, at room temperature
- 6 oz cream cheese, cold
- 1/2 tsp vanilla
- 2 tbsp apple cider reduction
- 1/4 cup granulated sugar (for topping)
- 1/4 tsp ground cinnamon (for topping)
- 1/8 tsp ground nutmeg (for topping)

- 1–2 tbsp salted butter, melted (for topping)
Instructions
- Prepare an apple cider reduction by boiling the apple cider in a saucepan over medium heat until it reduces to about 1 cup; allow it to cool.
- In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add egg yolks and vanilla; mix well.
- Gradually blend in flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground allspice. Fold in the cooled apple cider reduction.
- For the cheesecake filling, beat cold cream cheese with vanilla and granulated sugar until smooth.
- Preheat oven to 350°F (175°C). Scoop a tablespoon of dough into your palm, flatten slightly to form a disc, place about one teaspoon of cheesecake filling in the center, then cover with another tablespoon of dough and roll into a ball.
- Place cookie balls on parchment-lined baking sheets spaced apart. Brush each with melted salted butter and sprinkle spiced sugar on top. Bake for about 11 minutes or until edges are golden.
