  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 6 oz cream cheese, cold
  • 1/2 tsp vanilla
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated sugar (for topping)
  • 1/4 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • pinch ground allspice (for topping)
  • 12 tbsp salted butter, melted (for topping)

Instructions

  1. Prepare an apple cider reduction by boiling the apple cider in a saucepan over medium heat until it reduces to about 1 cup; allow it to cool.
  2. In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add egg yolks and vanilla; mix well.
  3. Gradually blend in flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground allspice. Fold in the cooled apple cider reduction.
  4. For the cheesecake filling, beat cold cream cheese with vanilla and granulated sugar until smooth.
  5. Preheat oven to 350°F (175°C). Scoop a tablespoon of dough into your palm, flatten slightly to form a disc, place about one teaspoon of cheesecake filling in the center, then cover with another tablespoon of dough and roll into a ball.
  6. Place cookie balls on parchment-lined baking sheets spaced apart. Brush each with melted salted butter and sprinkle spiced sugar on top. Bake for about 11 minutes or until edges are golden.
